So it looks like I have to write some kind of in game GUI file dialog... bleh.
I also ran into a bit of madness with dynamic font sizes making HUGE texture fonts. Ended up exporting the texture font via some cool code on the Unity Wiki and using that bitmap separately. Then I went and changed all text textures everywhere...

Yea, a lot of very useful classes are "editor classes only".
